Ingredients
- 2 cups of Arborio rice
- 4 cups of vegetable broth
- 1/2 teaspoon of saffron threads
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a small bowl, steep the saffron threads in 2 tablespoons of warm water for 10 minutes.
- In a large pot, bring the vegetable broth to a simmer over medium heat.
- Add the Arborio rice to the simmering broth and stir gently.
- Once the rice has absorbed most of the broth, add the steeped saffron and continue to cook, stirring occasionally, until the rice is tender and creamy.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Remove from heat and let the rice rest for a few minutes before serving.
