Ingredients

  • 2 cups of Arborio rice
  • 4 cups of vegetable broth
  • 1/2 teaspoon of saffron threads
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a small bowl, steep the saffron threads in 2 tablespoons of warm water for 10 minutes.
  2. In a large pot, bring the vegetable broth to a simmer over medium heat.
  3. Add the Arborio rice to the simmering broth and stir gently.
  4. Once the rice has absorbed most of the broth, add the steeped saffron and continue to cook, stirring occasionally, until the rice is tender and creamy.
  5. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  6. Remove from heat and let the rice rest for a few minutes before serving.
