Risotto Ai Funghi Del Monte Titano (mount Titan Mushroom Risotto)
Risotto ai Funghi del Monte Titano, or Mount Titan Mushroom Risotto, is a traditional dish from the small European country of San Marino. This creamy and flavorful risotto is made with local mushrooms and is a popular comfort food in Sammarinese cuisine.
Ingredients
- 2 cups Arborio rice
- 1/2 cup white wine
- 6 cups chicken or vegetable broth
- 1/2 cup grated Parmigiano-Reggiano cheese
- 1/4 cup unsalted butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 pound Mount Titan mushrooms, sliced
- Salt and pepper to taste
Instructions
- In a large pot, heat the broth over medium heat. Keep it warm while you prepare the risotto.
- In a separate large, heavy-bottomed pot, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
- Add the Arborio rice to the pot and stir to coat the grains with the butter, onions, and garlic. Cook for 2 minutes.
- Pour in the white wine and cook, stirring constantly, until the wine has evaporated.
- Add a ladleful of warm broth to the rice and cook, stirring constantly, until the liquid has been absorbed. Continue adding the broth, one ladleful at a time, and stirring constantly until the rice is creamy and al dente, about 20 minutes.
- Stir in the sliced Mount Titan mushrooms and cook for an additional 5 minutes, allowing the mushrooms to release their flavors into the risotto.
- Remove the pot from the heat and stir in the grated Parmigiano-Reggiano cheese. Season with salt and pepper to taste.
- Let the risotto rest for a few minutes before serving. Garnish with additional cheese if desired.
