Ingredients

  • 2 cups Arborio rice
  • 1/2 cup white wine
  • 6 cups chicken or vegetable broth
  • 1/2 cup grated Parmigiano-Reggiano cheese
  • 1/4 cup unsalted butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 pound Mount Titan mushrooms, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the broth over medium heat. Keep it warm while you prepare the risotto.
  2. In a separate large, heavy-bottomed pot, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the Arborio rice to the pot and stir to coat the grains with the butter, onions, and garlic. Cook for 2 minutes.
  4. Pour in the white wine and cook, stirring constantly, until the wine has evaporated.
  5. Add a ladleful of warm broth to the rice and cook, stirring constantly, until the liquid has been absorbed. Continue adding the broth, one ladleful at a time, and stirring constantly until the rice is creamy and al dente, about 20 minutes.
  6. Stir in the sliced Mount Titan mushrooms and cook for an additional 5 minutes, allowing the mushrooms to release their flavors into the risotto.
  7. Remove the pot from the heat and stir in the grated Parmigiano-Reggiano cheese. Season with salt and pepper to taste.
  8. Let the risotto rest for a few minutes before serving. Garnish with additional cheese if desired.
