Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Instructions

  1. In a saucepan, heat the chicken or vegetable broth over low heat.
  2. In a separate large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the Arborio rice to the pan and stir to coat the grains with the oil, onion, and garlic mixture.
  4. Pour in the white wine and cook until it has been absorbed by the rice.
  5. Begin adding the warm broth to the rice, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  6. Continue this process until the rice is creamy and al dente, about 20-25 minutes.
  7. Stir in the butter, Parmesan cheese, lemon juice, and lemon zest. Season with salt and pepper to taste.
  8. Remove from heat and let the risotto rest for a few minutes before serving.
