Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 1/4 cup unsalted butter
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a saucepan, heat the chicken or vegetable broth over low heat.
- In a separate large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the Arborio rice to the pan and stir to coat the grains with the oil, onion, and garlic mixture.
- Pour in the white wine and cook until it has been absorbed by the rice.
- Begin adding the warm broth to the rice, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- Continue this process until the rice is creamy and al dente, about 20-25 minutes.
- Stir in the butter, Parmesan cheese, lemon juice, and lemon zest. Season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving.
