Ingredients
- 1 1/2 cups Arborio rice
- 4 cups vegetable broth
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 lemons, zest and juice
- 1/4 cup unsalted butter
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a saucepan, heat the vegetable broth over low heat.
- In a large pan, melt the butter over medium heat. Add the shallot and garlic, and cook until softened.
- Add the Arborio rice to the pan and stir to coat with the butter. Cook for 1-2 minutes.
- Pour in the white wine and cook until it has been absorbed by the rice.
- Begin adding the warm vegetable broth to the rice, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- Continue this process until the rice is creamy and al dente, about 20 minutes.
- Stir in the lemon zest, lemon juice, and Parmesan cheese. Season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving.
