Risotto Al Radicchio (venetian Radicchio Risotto)
Risotto al Radicchio, or Venetian Radicchio Risotto, is a classic dish from the Veneto region of Italy. This creamy and flavorful risotto is made with the unique and slightly bitter radicchio, which gives the dish its distinctive taste and vibrant color.
Ingredients
- 1 cup Arborio rice
- 1 small head of radicchio, finely chopped
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 3 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large saucepan, heat the broth over medium heat.
- In a separate large, deep skillet, melt 2 tablespoons of butter over medium heat. Add the onion and garlic, and cook until softened.
- Add the rice to the skillet and stir to coat with the butter, onion, and garlic mixture. Cook for 2-3 minutes until the rice becomes translucent around the edges.
- Pour in the white wine and cook, stirring constantly, until the wine is fully absorbed by the rice.
- Add a ladleful of the warm broth to the rice and cook, stirring constantly, until the broth is absorbed. Continue adding the broth, one ladleful at a time, and stirring constantly until the rice is creamy and al dente, about 20 minutes.
- Stir in the chopped radicchio and cook for an additional 3-5 minutes, until the radicchio is wilted and the risotto is creamy.
- Remove the skillet from the heat and stir in the remaining butter and grated Parmesan cheese. Season with salt and pepper to taste.
- Let the risotto rest for a few minutes before serving. Serve hot, garnished with additional Parmesan cheese if desired.
