Ingredients
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- 6 cups beef or vegetable broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and pepper to taste
- 1 pound beef chuck roast, cut into chunks
- 2 tablespoons olive oil
- 1 carrot, diced
- 1 celery stalk, diced
- 1 cup red wine
- 2 cups beef broth
- 2 bay leaves
Instructions
- In a large pot, heat the olive oil over medium-high heat. Season the beef with salt and pepper, then sear the beef in the pot until browned on all sides. Remove the beef from the pot and set aside.
- Add the diced carrot and celery to the pot and cook until softened, about 5 minutes. Pour in the red wine and scrape up any browned bits from the bottom of the pot. Allow the wine to reduce by half.
- Return the beef to the pot and add the beef broth and bay leaves. Bring to a simmer, then cover and cook on low heat for 1 hour, or until the beef is tender.
- Meanwhile, in a separate pot, bring the beef or vegetable broth to a simmer. In another large pot, melt the butter over medium heat and sauté the onion and garlic until softened.
- Add the Arborio rice to the pot and stir to coat the rice with the butter. Pour in the white wine and cook until the wine is absorbed.
- Begin adding the simmering broth to the rice, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next. Continue this process until the rice is creamy and al dente, about 20 minutes.
- Stir in the grated Parmesan cheese and season with salt and pepper. Serve the risotto topped with the braised beef.
