Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1 small onion, finely chopped
- 2 tablespoons butter
- 1/2 teaspoon saffron threads
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a small bowl, steep the saffron threads in 2 tablespoons of warm water for 10 minutes.
- In a large saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the Arborio rice to the saucepan and stir to coat the rice with the butter, cooking for 1-2 minutes.
- Pour in the white wine and cook, stirring constantly, until the wine has evaporated.
- Begin adding the broth, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
- After about 15 minutes, when the rice is almost cooked, stir in the saffron and its soaking liquid.
- Continue adding the broth and stirring until the rice is creamy and al dente, about 5-7 minutes more.
- Remove the risotto from the heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
- Let the risotto rest for a few minutes before serving. Garnish with additional Parmesan cheese if desired.
