Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • 1/2 teaspoon saffron threads
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a small bowl, steep the saffron threads in 2 tablespoons of warm water for 10 minutes.
  2. In a large saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the Arborio rice to the saucepan and stir to coat the rice with the butter, cooking for 1-2 minutes.
  4. Pour in the white wine and cook, stirring constantly, until the wine has evaporated.
  5. Begin adding the broth, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
  6. After about 15 minutes, when the rice is almost cooked, stir in the saffron and its soaking liquid.
  7. Continue adding the broth and stirring until the rice is creamy and al dente, about 5-7 minutes more.
  8. Remove the risotto from the heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  9. Let the risotto rest for a few minutes before serving. Garnish with additional Parmesan cheese if desired.
