Risotto Allo Zafferano (saffron Risotto)

Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon saffron threads
- 1/2 cup grated Parmesan cheese
- 4 tablespoons unsalted butter
- Salt and pepper to taste
Instructions
- In a small bowl, steep the saffron threads in 1/4 cup of warm broth for 10 minutes.
- In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the Arborio rice to the saucepan and stir to coat the grains with the butter, onion, and garlic mixture.
- Pour in the white wine and cook until it has evaporated.
- Begin adding the broth, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
- After about 15 minutes, add the saffron-infused broth to the risotto and continue stirring.
- Once the rice is creamy and al dente, remove the saucepan from the heat and stir in the remaining butter and Parmesan cheese. Season with salt and pepper.
- Let the risotto rest for a few minutes before serving. Garnish with additional Parmesan cheese if desired.
