Risotto Cu Ciuperci (creamy Mushroom Risotto)

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound mixed mushrooms, such as cremini and shiitake, sliced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the chicken or vegetable broth over medium heat.
  2. In a separate large, deep skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
  4. Add the Arborio rice to the skillet and stir to coat the rice with the onion, garlic, and oil, about 2 minutes.
  5. Pour in the white wine and cook until it has been absorbed by the rice, stirring constantly.
  6. Begin adding the warm broth to the skillet, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next. This process will take about 20 minutes.
  7. While adding the broth, in a separate skillet, melt the butter over medium heat. Add the sliced mushrooms and cook until they are golden and tender, about 8-10 minutes.
  8. Once all the broth has been added to the rice and the rice is creamy and tender, stir in the cooked mushrooms and grated Parmesan cheese. Season with salt and pepper to taste.
  9. Remove the skillet from the heat and let the risotto rest for a few minutes before serving.
