Risotto De Setas Cremoso (creamy Mushroom Risotto)

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 pound mixed mushrooms (such as cremini, shiitake, and oyster), sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a saucepan, heat the chicken or vegetable broth over low heat.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the Arborio rice to the skillet and stir to coat with the onion and garlic mixture. Cook for 1-2 minutes.
  4. Pour in the white wine and cook until it is absorbed by the rice.
  5. Begin adding the warm broth to the rice, one ladleful at a time, stirring constantly and allowing the liquid to be absorbed before adding more. Continue this process until the rice is creamy and al dente, about 20 minutes.
  6. While the risotto is cooking, in another skillet, melt the remaining tablespoon of butter. Add the sliced mushrooms and sauté until they are golden and tender. Season with salt and pepper.
  7. Once the risotto is cooked, stir in the grated Parmesan cheese, heavy cream, and sautéed mushrooms. Adjust the seasoning with salt and pepper if needed.
  8. Divide the risotto into serving bowls, garnish with chopped parsley, and serve hot.
