Risotto Del Castello (castle Risotto)

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon saffron threads
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the chicken or vegetable broth over low heat.
  2. In a separate large pan, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the Arborio rice to the pan and stir to coat the grains with the butter, onion, and garlic mixture.
  4. Pour in the white wine and cook until it has evaporated.
  5. Dissolve the saffron threads in a ladleful of the warm broth, then add it to the rice. Continue to add the warm broth, one ladleful at a time, stirring frequently and allowing the liquid to be absorbed before adding more.
  6. Once the rice is creamy and al dente, stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  7. Remove the risotto from the heat and let it rest for a few minutes before serving.
