Risotto Del Castello (castle Risotto)

Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 1/4 cup unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon saffron threads
- Salt and pepper to taste
Instructions
- In a saucepan, heat the chicken or vegetable broth over low heat.
- In a separate large pan, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the Arborio rice to the pan and stir to coat the grains with the butter, onion, and garlic mixture.
- Pour in the white wine and cook until it has evaporated.
- Dissolve the saffron threads in a ladleful of the warm broth, then add it to the rice. Continue to add the warm broth, one ladleful at a time, stirring frequently and allowing the liquid to be absorbed before adding more.
- Once the rice is creamy and al dente, stir in the grated Parmesan cheese. Season with salt and pepper to taste.
- Remove the risotto from the heat and let it rest for a few minutes before serving.
