Ingredients

  • 1 cup Arborio rice
  • 1/2 cup white wine
  • 4 cups seafood or fish stock
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 lb mixed seafood (shrimp, mussels, clams, squid)
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the Arborio rice to the pan and stir to coat the rice with the oil. Cook for 1-2 minutes.
  3. Pour in the white wine and cook until it has been absorbed by the rice.
  4. Begin adding the seafood or fish stock, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  5. After about 15 minutes, add the mixed seafood to the risotto and continue to cook until the seafood is fully cooked and the rice is creamy.
  6. Stir in the grated Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
  7. Remove from heat and let the risotto rest for a few minutes before serving.
