Rista (रिस्ता)
रिस्ता (Rista) is a traditional Kashmiri dish made with juicy minced meatballs cooked in a flavorful and aromatic gravy. This dish is a true representation of the rich and vibrant Kashmiri cuisine.
Ingredients
- 500g minced mutton
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp fennel powder
- 1/2 tsp garam masala
- 1/4 cup yogurt
- 2-3 tbsp ghee
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- In a large bowl, mix the minced mutton with ginger-garlic paste, red chili powder, turmeric powder, fennel powder, garam masala, and salt. Shape the mixture into small meatballs.
- Heat ghee in a pan and fry the chopped onions until golden brown. Add the tomato puree and cook until the oil separates.
- Whisk the yogurt and add it to the pan. Cook for a few minutes, then add the meatballs to the gravy.
- Cover and cook on low heat for 30-35 minutes or until the meatballs are cooked through and the gravy thickens.
- Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
