रिस्ता (Rista) is a traditional Kashmiri dish made with juicy minced meatballs cooked in a flavorful and aromatic gravy. This dish is a true representation of the rich and vibrant Kashmiri cuisine.

Ingredients

  • 500g minced mutton
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp fennel powder
  • 1/2 tsp garam masala
  • 1/4 cup yogurt
  • 2-3 tbsp ghee
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a large bowl, mix the minced mutton with ginger-garlic paste, red chili powder, turmeric powder, fennel powder, garam masala, and salt. Shape the mixture into small meatballs.
  2. Heat ghee in a pan and fry the chopped onions until golden brown. Add the tomato puree and cook until the oil separates.
  3. Whisk the yogurt and add it to the pan. Cook for a few minutes, then add the meatballs to the gravy.
  4. Cover and cook on low heat for 30-35 minutes or until the meatballs are cooked through and the gravy thickens.
  5. Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
