Ingredients

  • 2 cups of jasmine rice
  • 1 can (14 oz) of coconut milk
  • 1 lb of shrimp, peeled and deveined
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 scotch bonnet pepper, finely chopped
  • 1 teaspoon of curry powder
  • 1 teaspoon of paprika
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are soft and fragrant.
  2. Add the curry powder and paprika to the pot, stirring to coat the vegetables with the spices.
  3. Pour in the coconut milk and bring to a gentle simmer.
  4. Stir in the jasmine rice and season with salt and pepper. Cover the pot and let the rice cook for about 15-20 minutes, or until it is tender and has absorbed the coconut milk.
  5. While the rice is cooking, season the shrimp with salt and pepper. In a separate pan, heat a little oil over medium-high heat and cook the shrimp for 2-3 minutes on each side, until they are pink and opaque.
  6. Once the rice is cooked, gently fold in the cooked shrimp and chopped scotch bonnet pepper. Adjust the seasoning if needed.
