Ingredients
- 2 cups of jasmine rice
- 1 can (14 oz) of coconut milk
- 1 lb of shrimp, peeled and deveined
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 scotch bonnet pepper, finely chopped
- 1 teaspoon of curry powder
- 1 teaspoon of paprika
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are soft and fragrant.
- Add the curry powder and paprika to the pot, stirring to coat the vegetables with the spices.
- Pour in the coconut milk and bring to a gentle simmer.
- Stir in the jasmine rice and season with salt and pepper. Cover the pot and let the rice cook for about 15-20 minutes, or until it is tender and has absorbed the coconut milk.
- While the rice is cooking, season the shrimp with salt and pepper. In a separate pan, heat a little oil over medium-high heat and cook the shrimp for 2-3 minutes on each side, until they are pink and opaque.
- Once the rice is cooked, gently fold in the cooked shrimp and chopped scotch bonnet pepper. Adjust the seasoning if needed.
- Remove the pot from the heat and let it sit, covered, for a few minutes before serving.
- Serve the Riz au Coco aux Crevettes garnished with fresh cilantro.
