Riz Au Gras (jollof Rice)

Ingredients

  • 2 cups long-grain white rice
  • 1/4 cup vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 1 pound chicken, cut into pieces (optional)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add the diced red bell pepper and cook for a few minutes.
  4. Stir in the diced tomatoes, chicken or vegetable broth, paprika, thyme, curry powder, salt, and pepper.
  5. If using chicken, add the chicken pieces to the pot.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
  7. Stir in the rice, making sure it is evenly distributed in the pot.
  8. Cover the pot and let the rice cook for 20-25 minutes, or until all the liquid is absorbed and the rice is tender.
  9. Fluff the rice with a fork and serve hot.
