Riz Au Gras (jollof Rice)
Riz au Gras, also known as Jollof Rice, is a popular dish in Cameroonian cuisine. It is a flavorful and aromatic one-pot rice dish that is perfect for sharing with family and friends.
Ingredients
- 2 cups long-grain white rice
- 1/4 cup vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 cups chicken or vegetable broth
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 teaspoon curry powder
- Salt and pepper to taste
- 1 pound chicken, cut into pieces (optional)
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the diced red bell pepper and cook for a few minutes.
- Stir in the diced tomatoes, chicken or vegetable broth, paprika, thyme, curry powder, salt, and pepper.
- If using chicken, add the chicken pieces to the pot.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
- Stir in the rice, making sure it is evenly distributed in the pot.
- Cover the pot and let the rice cook for 20-25 minutes, or until all the liquid is absorbed and the rice is tender.
- Fluff the rice with a fork and serve hot.
