Ingredients

  • 2 cups long-grain rice
  • 1 onion, finely chopped
  • 3 tomatoes, blended
  • 1 bell pepper, diced
  • 2 cups chicken or vegetable broth
  • 1 lb chicken, cut into pieces (optional)
  • 1/4 cup vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and cook until translucent.
  3. Add the blended tomatoes, diced bell pepper, paprika, thyme, salt, and pepper. Cook for 10 minutes, stirring occasionally.
  4. If using chicken, add the chicken pieces to the pot and cook until browned.
  5. Pour in the broth and bring the mixture to a boil.
  6. Stir in the rice, reduce the heat to low, cover, and simmer for 20-25 minutes or until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork and serve hot.
