Ingredients
- 2 cups long-grain rice
- 1 onion, finely chopped
- 3 tomatoes, blended
- 1 bell pepper, diced
- 2 cups chicken or vegetable broth
- 1 lb chicken, cut into pieces (optional)
- 1/4 cup vegetable oil
- 1 teaspoon paprika
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and cook until translucent.
- Add the blended tomatoes, diced bell pepper, paprika, thyme, salt, and pepper. Cook for 10 minutes, stirring occasionally.
- If using chicken, add the chicken pieces to the pot and cook until browned.
- Pour in the broth and bring the mixture to a boil.
- Stir in the rice, reduce the heat to low, cover, and simmer for 20-25 minutes or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
