Ingredients
- 2 cups jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 lb chicken thighs, cut into bite-sized pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground ginger
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 cups chicken broth
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Stir in the ground ginger, curry powder, paprika, turmeric, salt, and pepper, and cook for another 2 minutes to toast the spices.
- Add the jasmine rice to the pot and stir to coat the rice with the spices and chicken.
- Pour in the coconut milk and chicken broth, and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and let it sit for a few minutes before serving.
- Garnish the coconut rice with fresh cilantro and serve hot.
