Ingredients

  • 2 cups jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 lb chicken thighs, cut into bite-sized pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the chicken pieces to the pot and cook until they are browned on all sides.
  3. Stir in the ground ginger, curry powder, paprika, turmeric, salt, and pepper, and cook for another 2 minutes to toast the spices.
  4. Add the jasmine rice to the pot and stir to coat the rice with the spices and chicken.
  5. Pour in the coconut milk and chicken broth, and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  7. Once the rice is cooked, fluff it with a fork and let it sit for a few minutes before serving.
  8. Garnish the coconut rice with fresh cilantro and serve hot.
