Ingredients
- 2 cups jasmine rice
- 1 can (14 oz) coconut milk
- 1 cup water
- 1 teaspoon salt
- 4 chicken thighs
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- Vegetable oil for frying
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 teaspoon curry powder
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour, paprika, garlic powder, onion powder, and cayenne pepper. Dredge the chicken thighs in the seasoned flour mixture, shaking off any excess.
- Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken thighs until golden brown and cooked through, about 6-8 minutes per side. Remove from the skillet and set aside.
- In a separate pot, combine the jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, in the same skillet used for the chicken, sauté the chopped onion, minced garlic, and sliced red bell pepper until softened.
- Stir in the curry powder, thyme, salt, and pepper. Cook for an additional 2-3 minutes.
- Once the rice is cooked, fluff it with a fork and transfer it to a serving platter. Arrange the fried chicken thighs on top of the coconut rice.
- Serve the Riz au Poulet hot and enjoy!
