Ingredients

  • 2 cups jasmine rice
  • 1 can (14 oz) coconut milk
  • 1 cup water
  • 1 teaspoon salt
  • 4 chicken thighs
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • Vegetable oil for frying
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour, paprika, garlic powder, onion powder, and cayenne pepper. Dredge the chicken thighs in the seasoned flour mixture, shaking off any excess.
  2. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken thighs until golden brown and cooked through, about 6-8 minutes per side. Remove from the skillet and set aside.
  3. In a separate pot, combine the jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. While the rice is cooking, in the same skillet used for the chicken, sauté the chopped onion, minced garlic, and sliced red bell pepper until softened.
  5. Stir in the curry powder, thyme, salt, and pepper. Cook for an additional 2-3 minutes.
  6. Once the rice is cooked, fluff it with a fork and transfer it to a serving platter. Arrange the fried chicken thighs on top of the coconut rice.
  7. Serve the Riz au Poulet hot and enjoy!
