Ingredients

  • 2 cups of jasmine rice
  • 1 can of tuna, drained
  • 1 can of coconut milk
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of curry powder
  • 1 teaspoon of turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until softened.
  2. Add the curry powder and turmeric, and cook for another minute to release the flavors.
  3. Stir in the jasmine rice, coconut milk, and 1 1/2 cups of water. Season with salt and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Flake the tuna and gently fold it into the cooked rice.
  6. Garnish with fresh cilantro before serving.
