Ingredients
- 2 cups of jasmine rice
- 1 can of tuna, drained
- 1 can of coconut milk
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon of curry powder
- 1 teaspoon of turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the chopped onion and minced garlic until softened.
- Add the curry powder and turmeric, and cook for another minute to release the flavors.
- Stir in the jasmine rice, coconut milk, and 1 1/2 cups of water. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Flake the tuna and gently fold it into the cooked rice.
- Garnish with fresh cilantro before serving.
