Ingredients
- 1 whole chicken, cut into pieces
- 2 cups basmati rice
- 1/2 cup pine nuts
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground turmeric
- Salt and pepper to taste
- 4 cups chicken broth
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the spices, salt, and pepper, then pour in the chicken broth. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
- Meanwhile, rinse the rice under cold water until the water runs clear. Drain the rice and add it to the pot with the chicken, stirring to combine.
- Cover the pot and let the rice cook for 15-20 minutes, or until tender and the liquid is absorbed.
- While the rice is cooking, toast the pine nuts in a dry skillet over medium heat until golden brown and fragrant.
- Once the rice is cooked, fluff it with a fork and transfer to a serving platter. Sprinkle the toasted pine nuts on top before serving.
