Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups basmati rice
  • 1/2 cup pine nuts
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground turmeric
  • Salt and pepper to taste
  • 4 cups chicken broth

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the chicken pieces to the pot and brown on all sides.
  3. Stir in the spices, salt, and pepper, then pour in the chicken broth. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
  4. Meanwhile, rinse the rice under cold water until the water runs clear. Drain the rice and add it to the pot with the chicken, stirring to combine.
