Riz Djiboutien (djiboutian Spiced Rice)

Ingredients

  • 2 cups basmati rice
  • 3 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced

  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the ground cumin, ground coriander, turmeric, cinnamon, and salt. Cook for 1-2 minutes to toast the spices.
  4. Add the basmati rice to the pot and stir to coat the rice with the spiced onion mixture.
  5. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the rice with a fork before serving.
