Riz Frit Ananas (pineapple Fried Rice)

Ingredients

  • 3 cups cooked white rice
  • 1 cup fresh pineapple, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
  3. Heat the remaining oil in the same pan, then add the onion and garlic. Cook until fragrant.
  4. Add the bell pepper, carrot, and peas. Stir-fry for a few minutes until the vegetables are tender-crisp.
  5. Stir in the cooked rice, pineapple, soy sauce, curry powder, and turmeric. Cook for an additional 3-4 minutes, stirring constantly.
  6. Finally, add the scrambled eggs back to the pan and mix well. Season with salt and pepper to taste.
  7. Remove from heat and serve the Riz Frit Ananas hot.
