Ingredients
- 3 cups cooked white rice
- 1 cup fresh pineapple, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 1/2 cup frozen peas
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon curry powder
- 1/2 teaspoon turmeric
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
- Heat the remaining oil in the same pan, then add the onion and garlic. Cook until fragrant.
- Add the bell pepper, carrot, and peas. Stir-fry for a few minutes until the vegetables are tender-crisp.
- Stir in the cooked rice, pineapple, soy sauce, curry powder, and turmeric. Cook for an additional 3-4 minutes, stirring constantly.
- Finally, add the scrambled eggs back to the pan and mix well. Season with salt and pepper to taste.
- Remove from heat and serve the Riz Frit Ananas hot.
