Ingredients
- 2 cups of cooked rice
- 1 pound of shrimp, peeled and deveined
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 cup of frozen mixed vegetables
- 2 eggs, beaten
- 3 tablespoons of soy sauce
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook until pink, then remove from the skillet and set aside.
- Heat the remaining oil in the same skillet, then add the onion, garlic, and bell pepper. Cook until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until cooked, then mix them with the vegetables.
- Add the cooked rice, frozen vegetables, and soy sauce to the skillet. Stir well to combine.
- Finally, add the cooked shrimp back to the skillet and stir until everything is heated through.
- Season with salt and pepper to taste, then serve hot.
