Ingredients
- 2 cups of long-grain white rice
- 1 pound of smoked meat, diced
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 2 cups of chicken broth
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
Instructions
- Wash the rice and drain well.
- In a large pot, heat the vegetable oil over medium heat. Add the diced smoked meat and cook until browned.
- Add the chopped onion, garlic, and bell pepper. Cook until the vegetables are softened.
- Stir in the chopped tomatoes and paprika. Cook for a few minutes until the tomatoes break down.
- Add the washed rice to the pot and stir to combine with the meat and vegetables.
- Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
