Riz Gras (malian Style Fried Rice)

Ingredients

  • 2 cups of long-grain white rice
  • 4 cups of water
  • 1/4 cup of vegetable oil
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 2 carrots, grated
  • 1 cup of green peas
  • 2 cloves of garlic, minced
  • 1 teaspoon of curry powder
  • 1/2 teaspoon of thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, bring the water to a boil and add the rice. Cook for 10-12 minutes or until the rice is tender. Drain and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
  4. Add the tomatoes, bell pepper, carrots, and green peas to the skillet. Cook for 5-7 minutes or until the vegetables are tender.
  5. Stir in the cooked rice, curry powder, thyme, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.
  6. Remove from heat and serve the Riz Gras hot.
