Riz Sauce Tomate (cameroonian Style Fried Rice)

Ingredients

  • 3 cups of long-grain white rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 1 cup of mixed vegetables (carrots, peas, corn)
  • 1/4 cup of vegetable oil
  • 1 teaspoon of curry powder
  • 1 teaspoon of thyme
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Instructions

  1. Wash the rice and cook according to package instructions. Once cooked, set aside.
  2. In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the diced tomatoes, bell pepper, and mixed vegetables to the pan. Cook for 5-7 minutes until the vegetables are tender.
  4. Stir in the curry powder, thyme, paprika, salt, and pepper. Mix well to combine the flavors.
  5. Add the cooked rice to the pan and gently fold it into the vegetable mixture until well combined.
  6. Cover the pan and let the rice and vegetables cook together for an additional 5-7 minutes, stirring occasionally.
  7. Once the flavors have melded together, remove from heat and serve the Riz Sauce Tomate hot.
