Roast Kid (cabrito Assado)

Ingredients

  • 1 whole kid, about 8-10 pounds
  • 6 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons paprika
  • Salt and pepper to taste
  • 1 cup white wine

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix the minced garlic, olive oil, paprika, salt, and pepper to form a paste.
  3. Rub the garlic paste all over the kid, making sure to coat it evenly.
  4. Place the kid in a roasting pan and pour the white wine around it.
  5. Cover the pan with aluminum foil and roast in the preheated oven for 1 hour.
  6. Remove the foil and continue roasting for another hour, basting the kid with the pan juices every 20 minutes.
  7. Once the kid is golden brown and tender, remove it from the oven and let it rest for 10 minutes before carving.
