Ingredients
- 1 whole kid, about 8-10 pounds
- 6 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons paprika
- Salt and pepper to taste
- 1 cup white wine
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix the minced garlic, olive oil, paprika, salt, and pepper to form a paste.
- Rub the garlic paste all over the kid, making sure to coat it evenly.
- Place the kid in a roasting pan and pour the white wine around it.
- Cover the pan with aluminum foil and roast in the preheated oven for 1 hour.
- Remove the foil and continue roasting for another hour, basting the kid with the pan juices every 20 minutes.
- Once the kid is golden brown and tender, remove it from the oven and let it rest for 10 minutes before carving.
