Roast Pork Fried Rice (pernil Fried Rice)
Roast Pork Fried Rice, also known as Pernil Fried Rice, is a delicious fusion dish that combines the flavors of Puerto Rican and Chinese cuisine. This dish is a perfect way to use up any leftover roast pork and create a new and exciting meal.
Ingredients
- 3 cups cooked white rice
- 1 cup roast pork, diced
- 1/2 cup frozen peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1/2 teaspoon sesame oil
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 4 scallions, chopped
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add the beaten eggs and scramble until cooked through. Remove from the skillet and set aside.
- Heat the remaining vegetable oil in the same skillet, then add the garlic and roast pork. Cook for 2-3 minutes until the pork is heated through.
- Add the cooked rice, peas, and carrots to the skillet. Stir-fry for 3-4 minutes.
- Drizzle the soy sauce and sesame oil over the rice. Add the scrambled eggs and chopped scallions. Stir well to combine.
- Sprinkle with black pepper and continue to stir-fry for another 2-3 minutes.
- Remove from heat and serve hot.
