Roast Pork Lo Mein (pernil Lo Mein)

Ingredients

  • 1 lb roast pork, shredded
  • 8 oz lo mein noodles
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 cup mixed vegetables (carrots, bell peppers, snap peas)
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Boil the lo mein noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add the sliced onion and minced garlic, and sauté until fragrant.
  4. Stir in the shredded roast pork and mixed vegetables, and cook until the vegetables are tender-crisp.
  5. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and sugar.
  6. Pour the sauce over the pork and vegetable mixture, and toss to combine.
  7. Add the cooked lo mein noodles to the pan, and toss everything together until well combined and heated through.
  8. Season with salt and pepper to taste.
