Roasted Beef with Creamy Horseradish Sauce (Pečené hovädzie s kremovou chrenom)

Ingredients
- 1.5 kg beef roast
- 2 tbsp olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup sour cream
- 3 tbsp horseradish
- Salt and pepper to taste
Instructions
- Preheat the oven to 160°C.
- Season the beef roast with salt and pepper.
- Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Sear the beef roast on all sides until browned, about 4-5 minutes per side.
- Add the chopped onion and minced garlic to the pot and cook for 2-3 minutes.
- Pour in the beef broth and bring to a simmer.
- Cover the pot and transfer it to the preheated oven. Roast the beef for 1.5 to 2 hours, or until it reaches your desired level of doneness.
- While the beef is roasting, mix the sour cream and horseradish in a small bowl. Season with salt and pepper to taste.
- Once the beef is done, remove it from the oven and let it rest for 10 minutes before slicing.
- Serve the sliced beef with the creamy horseradish sauce on the side.
