Roasted Beef with Creamy Horseradish Sauce (Pečené hovädzie s kremovou chrenom)

Ingredients

  • 1.5 kg beef roast
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 3 tbsp horseradish
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 160°C.
  2. Season the beef roast with salt and pepper.
  3. Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Sear the beef roast on all sides until browned, about 4-5 minutes per side.
  5. Add the chopped onion and minced garlic to the pot and cook for 2-3 minutes.
  6. Pour in the beef broth and bring to a simmer.
  7. Cover the pot and transfer it to the preheated oven. Roast the beef for 1.5 to 2 hours, or until it reaches your desired level of doneness.
  8. While the beef is roasting, mix the sour cream and horseradish in a small bowl. Season with salt and pepper to taste.
  9. Once the beef is done, remove it from the oven and let it rest for 10 minutes before slicing.
  10. Serve the sliced beef with the creamy horseradish sauce on the side.
