Roasted Duck with Red Cabbage (Pečená kačica s červenou kapustou)

Ingredients

  • 1 whole duck, about 5 pounds
  • 1 head of red cabbage, shredded
  • 2 onions, sliced
  • 4 cloves of garlic, minced
  • 1 cup red wine
  • 1/4 cup red wine vinegar
  • 2 tablespoons sugar
  • 1 teaspoon ground cloves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the duck with salt, pepper, and ground cloves. Place it in a roasting pan.
  3. In a large bowl, mix the shredded red cabbage, onions, garlic, red wine, red wine vinegar, sugar, salt, and pepper. Pour this mixture around the duck in the roasting pan.
  4. Cover the roasting pan with foil and roast in the preheated oven for 1 hour.
  5. Remove the foil and continue roasting for another hour, or until the duck is golden brown and the cabbage is tender.
  6. Let the duck rest for 10 minutes before carving. Serve with the roasted red cabbage.
