Roasted Duck with Red Cabbage (Pečená kačica s červenou kapustou)
This traditional Slovak recipe for Pečená kačica s červenou kapustou (Roasted Duck with Red Cabbage) is a delicious and hearty dish that is perfect for special occasions or holiday gatherings.
Ingredients
- 1 whole duck, about 5 pounds
- 1 head of red cabbage, shredded
- 2 onions, sliced
- 4 cloves of garlic, minced
- 1 cup red wine
- 1/4 cup red wine vinegar
- 2 tablespoons sugar
- 1 teaspoon ground cloves
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Season the duck with salt, pepper, and ground cloves. Place it in a roasting pan.
- In a large bowl, mix the shredded red cabbage, onions, garlic, red wine, red wine vinegar, sugar, salt, and pepper. Pour this mixture around the duck in the roasting pan.
- Cover the roasting pan with foil and roast in the preheated oven for 1 hour.
- Remove the foil and continue roasting for another hour, or until the duck is golden brown and the cabbage is tender.
- Let the duck rest for 10 minutes before carving. Serve with the roasted red cabbage.
