Roasted Duck with Soy Glaze and Mountain Herbs is a traditional Ainu dish that combines the rich flavors of roasted duck with a savory soy glaze and the aromatic essence of mountain herbs. This recipe is a perfect representation of the unique and delicious flavors of Ainu cuisine.
Ingredients
- 1 whole duck, about 5 lbs
- 1/2 cup soy sauce
- 1/4 cup mirin
- 2 tablespoons sake
- 2 tablespoons sugar
- 2 tablespoons honey
- 1 tablespoon grated ginger
- 1 tablespoon minced garlic
- 1/4 cup mixed mountain herbs (such as yomogi, seri, and zenmai)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Rinse the duck and pat dry. Season the duck with salt and pepper, both inside and out.
- In a small saucepan, combine the soy sauce, mirin, sake, sugar, honey, grated ginger, and minced garlic. Cook over medium heat until the sugar is dissolved and the glaze is slightly thickened.
- Brush the duck with the soy glaze, inside and out. Place the mixed mountain herbs inside the cavity of the duck.
- Roast the duck in the preheated oven for 1.5 to 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
- Let the duck rest for 10 minutes before carving. Serve with the remaining soy glaze as a dipping sauce.
