Roasted Duck With Soy Glaze And Mountain Herbs

Ingredients

  • 1 whole duck, about 5 lbs
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons sake
  • 2 tablespoons sugar
  • 2 tablespoons honey
  • 1 tablespoon grated ginger
  • 1 tablespoon minced garlic
  • 1/4 cup mixed mountain herbs (such as yomogi, seri, and zenmai)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the duck and pat dry. Season the duck with salt and pepper, both inside and out.
  3. In a small saucepan, combine the soy sauce, mirin, sake, sugar, honey, grated ginger, and minced garlic. Cook over medium heat until the sugar is dissolved and the glaze is slightly thickened.
  4. Brush the duck with the soy glaze, inside and out. Place the mixed mountain herbs inside the cavity of the duck.
  5. Roast the duck in the preheated oven for 1.5 to 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  6. Let the duck rest for 10 minutes before carving. Serve with the remaining soy glaze as a dipping sauce.
