Ingredients

  • 2 large eggplants
  • 2 tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 tablespoons oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the stovetop flame and roast the eggplants until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add onions, green chilies, ginger, and garlic. Sauté until the onions are translucent.
  3. Add tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates.
  4. Stir in the mashed eggplant and cook for a few more minutes, allowing the flavors to meld together.
  5. Garnish with fresh cilantro and serve hot with roti or rice.
