Ingredients
- 2 large eggplants
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 tablespoons oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Preheat the stovetop flame and roast the eggplants until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
- Heat oil in a pan and add cumin seeds. Once they splutter, add onions, green chilies, ginger, and garlic. Sauté until the onions are translucent.
- Add tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates.
- Stir in the mashed eggplant and cook for a few more minutes, allowing the flavors to meld together.
- Garnish with fresh cilantro and serve hot with roti or rice.
