Roasted Garlic Aioli

Ingredients
- 1 head of garlic
- 1 tablespoon olive oil
- 1 cup mayonnaise
- 1 tablespoon lemon juice

Instructions
- Preheat the oven to 400°F (200°C).
- Cut off the top of the garlic head to expose the cloves.
- Drizzle with olive oil and wrap in foil.
- Roast in the oven for 40 minutes, or until the garlic is soft and golden brown.
- Allow the garlic to cool, then squeeze the roasted cloves into a bowl.
- Add mayonnaise, lemon juice, salt, and pepper to the bowl.
- Use a fork to mash and mix the ingredients until smooth and well combined.
- Refrigerate for at least 30 minutes before serving.
