Roasted Garlic Aioli

Ingredients

  • 1 head of garlic
  • 1 tablespoon olive oil
  • 1 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut off the top of the garlic head to expose the cloves.
  3. Drizzle with olive oil and wrap in foil.
  4. Roast in the oven for 40 minutes, or until the garlic is soft and golden brown.
  5. Allow the garlic to cool, then squeeze the roasted cloves into a bowl.
  6. Add mayonnaise, lemon juice, salt, and pepper to the bowl.
  7. Use a fork to mash and mix the ingredients until smooth and well combined.
  8. Refrigerate for at least 30 minutes before serving.
