Roasted Goose with Juniper Berry Sauce (Ræst Gásseyggj)

Ingredients

  • 1 whole goose, about 5-6 lbs
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon juniper berries
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/4 cup red wine
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the goose and pat dry. Season the goose with salt and pepper, inside and out.
  3. Place the juniper berries inside the cavity of the goose.
  4. Roast the goose in the preheated oven for 2 hours, or until the internal temperature reaches 165°F (74°C).
  5. While the goose is roasting, prepare the juniper berry sauce. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  6. Gradually whisk in the chicken broth and red wine. Add the juniper berries and honey. Simmer the sauce for 10-15 minutes, or until it thickens.
  7. Once the goose is done, let it rest for 15 minutes before carving. Serve the roasted goose with the juniper berry sauce.
