Roasted Goose with Juniper Berry Sauce (Ræst Gásseyggj)
Ræst Gásseyggj is a traditional Faroese dish that features succulent roasted goose served with a flavorful juniper berry sauce. This dish is a celebration of Faroese cuisine and is perfect for a special occasion or holiday feast.
Ingredients
- 1 whole goose, about 5-6 lbs
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon juniper berries
- 1 cup chicken broth
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/4 cup red wine
- 1 tablespoon honey
Instructions
- Preheat the oven to 350°F (175°C).
- Rinse the goose and pat dry. Season the goose with salt and pepper, inside and out.
- Place the juniper berries inside the cavity of the goose.
- Roast the goose in the preheated oven for 2 hours, or until the internal temperature reaches 165°F (74°C).
- While the goose is roasting, prepare the juniper berry sauce. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
- Gradually whisk in the chicken broth and red wine. Add the juniper berries and honey. Simmer the sauce for 10-15 minutes, or until it thickens.
- Once the goose is done, let it rest for 15 minutes before carving. Serve the roasted goose with the juniper berry sauce.
