Roasted Gram Flour Dumplings, also known as Sattu Litti, is a traditional dish from Jharkhandi Cuisine. These flavorful dumplings are made with roasted gram flour and are typically served with chokha (mashed vegetables) and tangy tamarind chutney.

Roasted Gram Flour Dumplings (sattu Litti)

Ingredients

  • 2 cups roasted gram flour (sattu)
  • 1 cup wheat flour
  • 1 teaspoon carom seeds (ajwain)
  • 2 tablespoons ghee
  • 1 teaspoon ginger, grated
  • 1 green chili, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • Water as needed
  • 2 tablespoons ghee for brushing

Instructions

  1. In a large bowl, mix together roasted gram flour, wheat flour, carom seeds, ghee, ginger, green chili, turmeric powder, red chili powder, and salt.
  2. Add water gradually and knead into a firm dough. Cover and let it rest for 20 minutes.
  3. Divide the dough into 12 equal portions and shape them into round dumplings.
  4. Preheat the oven to 180°C (350°F).
  5. Place the dumplings on a baking sheet and bake for 20-25 minutes, or until they are golden brown and cooked through.
  6. Brush the hot dumplings with ghee for a glossy finish.
  7. Serve the roasted gram flour dumplings with chokha and tamarind chutney.
