Roasted Gram Flour Dumplings With Spicy Mashed Vegetables (sattu Litti Chokha)
Sattu Litti Chokha is a traditional dish from Jharkhandi Cuisine, consisting of roasted gram flour dumplings served with spicy mashed vegetables. This flavorful and hearty dish is a popular choice for a satisfying meal.
Ingredients
- 2 cups gram flour (besan)
- 1 teaspoon carom seeds (ajwain)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 cup ghee (clarified butter)
- 4 medium-sized potatoes, boiled and mashed
- 2 tomatoes, finely chopped
- 2 onions, finely chopped
- 4 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1/2 teaspoon asafoetida (hing)
- Fresh coriander leaves, chopped
- Salt to taste
Instructions
- In a bowl, mix gram flour, carom seeds, turmeric powder, red chili powder, and 2 tablespoons of ghee. Knead the mixture into a firm dough, adding water as needed. Cover and set aside for 30 minutes.
- Meanwhile, prepare the spicy mashed vegetables (chokha) by mixing boiled and mashed potatoes, tomatoes, onions, green chilies, ginger-garlic paste, cumin seeds, asafoetida, coriander leaves, and salt in a bowl.
- Divide the dough into small balls and flatten them into discs. Place a spoonful of the spicy mashed vegetables in the center of each disc and seal the edges to form dumplings (litti).
- Heat a pan and roast the stuffed dumplings over low heat, brushing with ghee until golden brown and cooked through.
- Serve the roasted gram flour dumplings (litti) with the spicy mashed vegetables (chokha) and enjoy the authentic flavors of Jharkhandi cuisine.
