Roasted Gram Flour Dumplings With Spicy Mashed Vegetables (sattu Litti Chokha)

Ingredients

  • 2 cups gram flour (besan)
  • 1 teaspoon carom seeds (ajwain)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 cup ghee (clarified butter)
  • 4 medium-sized potatoes, boiled and mashed
  • 2 tomatoes, finely chopped
  • 2 onions, finely chopped
  • 4 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon asafoetida (hing)
  • Fresh coriander leaves, chopped
  • Salt to taste

Instructions

  1. In a bowl, mix gram flour, carom seeds, turmeric powder, red chili powder, and 2 tablespoons of ghee. Knead the mixture into a firm dough, adding water as needed. Cover and set aside for 30 minutes.
  2. Meanwhile, prepare the spicy mashed vegetables (chokha) by mixing boiled and mashed potatoes, tomatoes, onions, green chilies, ginger-garlic paste, cumin seeds, asafoetida, coriander leaves, and salt in a bowl.
  3. Divide the dough into small balls and flatten them into discs. Place a spoonful of the spicy mashed vegetables in the center of each disc and seal the edges to form dumplings (litti).
  4. Heat a pan and roast the stuffed dumplings over low heat, brushing with ghee until golden brown and cooked through.
  5. Serve the roasted gram flour dumplings (litti) with the spicy mashed vegetables (chokha) and enjoy the authentic flavors of Jharkhandi cuisine.
