Ingredients

  • 2 cups whole wheat flour
  • 1 cup roasted gram flour (sattu)
  • 1 tsp carom seeds (ajwain)
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 2 large potatoes, boiled and mashed
  • 2 green chilies, finely chopped
  • 1 inch ginger, grated
  • 2 tbsp fresh coriander leaves, chopped
  • Salt to taste
  • Oil for cooking

Instructions

  1. In a mixing bowl, combine whole wheat flour, carom seeds, and a pinch of salt. Gradually add water and knead into a smooth dough. Cover and let it rest for 15 minutes.
  2. In another bowl, mix roasted gram flour, red chili powder, turmeric powder, garam masala, green chilies, ginger, coriander leaves, and salt. This will be the stuffing for the flatbread.
  3. Divide the dough into equal-sized balls. Roll out each ball into a small disc and place a portion of the stuffing in the center. Bring the edges together and seal the stuffing inside the dough. Roll it out into a flatbread.
  4. Heat a skillet over medium heat and cook the stuffed flatbread with a little oil until golden brown on both sides.
  5. For the spicy potatoes, heat oil in a pan, add the mashed potatoes, and sauté with garam masala, salt, and a splash of water until the potatoes are coated with the spices.
