Ingredients

  • 1 whole Peking duck
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon Chinese five-spice powder
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt to taste
  • 4 green onions, cut into 2-inch pieces
  • 1 cucumber, cut into matchsticks
  • 16 small Chinese pancakes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together the honey, soy sauce, hoisin sauce, rice vinegar, Chinese five-spice powder, garlic, and ginger to make the marinade.
  3. Rub the duck inside and out with salt, then pour the marinade over the duck, making sure to coat it evenly. Let it marinate for 30 minutes.
  4. Place the duck on a rack in a roasting pan and roast in the preheated oven for 1 hour, basting every 20 minutes with the marinade.
  5. Increase the oven temperature to 425°F (220°C) and roast for an additional 30 minutes to crisp up the skin.
  6. Remove the duck from the oven and let it rest for 10 minutes before carving.
  7. Serve the carved duck with green onions, cucumber, and Chinese pancakes.
