Ingredients
- 4 red bell peppers
- 2 garlic cloves, minced
- 1/4 cup extra virgin olive oil

Instructions
- Preheat the broiler in your oven.
- Place the red bell peppers on a baking sheet and broil for 10-15 minutes, turning occasionally, until the skin is charred and blistered.
- Transfer the roasted peppers to a bowl and cover with plastic wrap. Let them steam for 10 minutes, then peel off the skin and remove the seeds.
- Chop the roasted peppers and place them in a food processor.
- Add the minced garlic, extra virgin olive oil, smoked paprika, salt, and pepper to the food processor.
- Pulse the mixture until it reaches your desired consistency.
- Transfer the roasted pepper spread to a serving bowl and drizzle with a little extra olive oil before serving.
