Ingredients

  • 4 red bell peppers
  • 2 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the broiler in your oven.
  2. Place the red bell peppers on a baking sheet and broil for 10-15 minutes, turning occasionally, until the skin is charred and blistered.
  3. Transfer the roasted peppers to a bowl and cover with plastic wrap. Let them steam for 10 minutes, then peel off the skin and remove the seeds.
  4. Chop the roasted peppers and place them in a food processor.
  5. Add the minced garlic, extra virgin olive oil, smoked paprika, salt, and pepper to the food processor.
  6. Pulse the mixture until it reaches your desired consistency.
  7. Transfer the roasted pepper spread to a serving bowl and drizzle with a little extra olive oil before serving.
