Roasted Pork Knuckle Delight

Ingredients
- 1 pork knuckle (about 2 kg)
- 2 tbsp caraway seeds
- 2 tbsp salt
- 1 tbsp black pepper
- 4 garlic cloves, minced
- 2 onions, sliced
- 2 bay leaves
- 500ml chicken broth
Instructions
- Preheat the oven to 180°C.
- Score the pork knuckle skin in a crisscross pattern.
- Combine caraway seeds, salt, black pepper, and minced garlic. Rub the mixture all over the pork knuckle.
- Place the sliced onions and bay leaves in a roasting pan. Put the seasoned pork knuckle on top.
- Pour the chicken broth into the roasting pan.
- Cover the pan with foil and roast for 1.5 hours.
- Remove the foil and roast for another 30 minutes or until the skin is crispy.
- Let the pork knuckle rest for 10 minutes before slicing and serving.
