Roasted Pumpkin and Barley Salad (Röstitud kõrvitsa- ja odrasalat)

Ingredients

  • 500g pumpkin, peeled and diced
  • 1 cup barley
  • 1 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1/4 cup pumpkin seeds
  • Salt and pepper to taste
  • 2 tbsp balsamic vinegar
  • 2 cups mixed salad greens

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, toss the diced pumpkin with 1 tablespoon of olive oil, salt, and pepper. Spread the pumpkin on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  3. Cook the barley according to the package instructions. Drain and set aside to cool.
  4. In a large bowl, combine the cooked barley, roasted pumpkin, sliced red onion, pumpkin seeds, and mixed salad greens.
  5. In a small bowl, whisk together the remaining olive oil and balsamic vinegar. Drizzle over the salad and toss to combine.
  6. Season with additional salt and pepper if needed. Serve the salad at room temperature.
