Roasted Pumpkin and Barley Salad (Röstitud kõrvitsa- ja odrasalat)

Ingredients
- 500g pumpkin, peeled and diced
- 1 cup barley
- 1 red onion, thinly sliced
- 2 tbsp olive oil
- 1/4 cup pumpkin seeds
- Salt and pepper to taste
- 2 tbsp balsamic vinegar
- 2 cups mixed salad greens
Instructions
- Preheat the oven to 200°C (400°F).
- In a bowl, toss the diced pumpkin with 1 tablespoon of olive oil, salt, and pepper. Spread the pumpkin on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
- Cook the barley according to the package instructions. Drain and set aside to cool.
- In a large bowl, combine the cooked barley, roasted pumpkin, sliced red onion, pumpkin seeds, and mixed salad greens.
- In a small bowl, whisk together the remaining olive oil and balsamic vinegar. Drizzle over the salad and toss to combine.
- Season with additional salt and pepper if needed. Serve the salad at room temperature.
