Roasted Pumpkin Salad (Balqabaq Salatası)
Balqabaq Salatası, or Roasted Pumpkin Salad, is a traditional dish from Gagauz cuisine that is perfect for the fall season. This salad is a delightful combination of roasted pumpkin, fresh vegetables, and a tangy dressing, making it a flavorful and healthy addition to any meal.
Ingredients
- 1 small pumpkin, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 red onion, thinly sliced
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- For the dressing:
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the pumpkin cubes with 2 tablespoons of olive oil, salt, and pepper.
- Spread the pumpkin cubes in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
- In a small bowl, whisk together the dressing ingredients: 3 tablespoons olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
- In a large serving bowl, combine the roasted pumpkin, sliced red onion, diced red bell pepper, diced cucumber, and chopped parsley.
- Pour the dressing over the salad and toss to coat evenly.
- Sprinkle the crumbled feta cheese on top and serve immediately.
