Roasted Pumpkin Salad (Balqabaq Salatası)

Ingredients

  • 1 small pumpkin, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 red onion, thinly sliced
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • For the dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the pumpkin cubes with 2 tablespoons of olive oil, salt, and pepper.
  3. Spread the pumpkin cubes in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  4. In a small bowl, whisk together the dressing ingredients: 3 tablespoons olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
  5. In a large serving bowl, combine the roasted pumpkin, sliced red onion, diced red bell pepper, diced cucumber, and chopped parsley.
  6. Pour the dressing over the salad and toss to coat evenly.
  7. Sprinkle the crumbled feta cheese on top and serve immediately.
