Roasted Red Pepper And Manchego Dip

Ingredients

  • 2 large red bell peppers
  • 1 cup grated Manchego cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the broiler in your oven.
  2. Place the red bell peppers on a baking sheet and broil, turning occasionally, until the skin is charred and blistered, about 10 minutes.
  3. Transfer the peppers to a bowl and cover with plastic wrap. Let them steam for 10 minutes, then peel off the skin and remove the seeds.
  4. Place the roasted red peppers, Manchego cheese, mayonnaise, sour cream, garlic, salt, pepper, olive oil, smoked paprika, and cayenne pepper in a food processor or blender. Blend until smooth.
  5. Transfer the dip to a serving bowl and garnish with chopped fresh parsley.
