Ingredients
- 2 large red bell peppers
- 1 cup grated Manchego cheese
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the broiler in your oven.
- Place the red bell peppers on a baking sheet and broil, turning occasionally, until the skin is charred and blistered, about 10 minutes.
- Transfer the peppers to a bowl and cover with plastic wrap. Let them steam for 10 minutes, then peel off the skin and remove the seeds.
- Place the roasted red peppers, Manchego cheese, mayonnaise, sour cream, garlic, salt, pepper, olive oil, smoked paprika, and cayenne pepper in a food processor or blender. Blend until smooth.
- Transfer the dip to a serving bowl and garnish with chopped fresh parsley.
