Roasted Red Pepper Dip (Ardei Copți)
Ardei Copți is a traditional Romani roasted red pepper dip that is bursting with smoky, sweet, and tangy flavors. It is a versatile dish that can be served as a dip, spread, or side dish, and it pairs perfectly with crusty bread, crackers, or fresh vegetables.
Ingredients
- 4 red bell peppers
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat the stovetop grill to high heat.
- Place the whole red bell peppers on the grill and cook, turning occasionally, until the skin is charred and blistered on all sides, about 15-20 minutes.
- Transfer the grilled peppers to a bowl and cover with plastic wrap. Let them steam for 10 minutes to loosen the skin.
- Peel off the charred skin, remove the seeds and stems, and chop the roasted peppers.
- In a food processor, combine the roasted peppers, minced garlic, olive oil, lemon juice, salt, and pepper. Blend until smooth.
- Transfer the dip to a serving bowl and refrigerate for at least 30 minutes before serving.
