Roasted Red Pepper Dip (Ardei Copți)

Ingredients

  • 4 red bell peppers
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the stovetop grill to high heat.
  2. Place the whole red bell peppers on the grill and cook, turning occasionally, until the skin is charred and blistered on all sides, about 15-20 minutes.
  3. Transfer the grilled peppers to a bowl and cover with plastic wrap. Let them steam for 10 minutes to loosen the skin.
  4. Peel off the charred skin, remove the seeds and stems, and chop the roasted peppers.
  5. In a food processor, combine the roasted peppers, minced garlic, olive oil, lemon juice, salt, and pepper. Blend until smooth.
  6. Transfer the dip to a serving bowl and refrigerate for at least 30 minutes before serving.
