Roasted Red Pepper Soup (Ciorbă de Ardei Copți)
Ciorbă de Ardei Copți, or Roasted Red Pepper Soup, is a traditional Romanian dish that is both flavorful and comforting. This soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 4 large red bell peppers, roasted and peeled
- 1 onion, chopped
- 2 potatoes, diced
- 3 cups vegetable broth
- 1 cup sour cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced potatoes and roasted red peppers to the pot. Pour in the vegetable broth and bring to a boil.
- Reduce the heat and let the soup simmer for 30 minutes, or until the potatoes are tender.
- Using an immersion blender, purée the soup until smooth.
- Stir in the sour cream and season with salt and pepper to taste.
- Serve hot, garnished with a dollop of sour cream and a sprinkle of freshly ground black pepper.
