Roasted Red Pepper Soup (Ciorbă de Ardei Copți)

Ingredients

  • 4 large red bell peppers, roasted and peeled
  • 1 onion, chopped
  • 2 potatoes, diced
  • 3 cups vegetable broth
  • 1 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the diced potatoes and roasted red peppers to the pot. Pour in the vegetable broth and bring to a boil.
  3. Reduce the heat and let the soup simmer for 30 minutes, or until the potatoes are tender.
  4. Using an immersion blender, purée the soup until smooth.
  5. Stir in the sour cream and season with salt and pepper to taste.
  6. Serve hot, garnished with a dollop of sour cream and a sprinkle of freshly ground black pepper.
