Roasted Spiced Lamb (omani Mashuai)

Ingredients

  • 2 lbs lamb shoulder, bone-in
  • 2 tbsp Omani spice mix
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 cups basmati rice
  • 6 cups chicken broth

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, mix together the Omani spice mix, turmeric, cumin, coriander, cinnamon, garlic, and olive oil to create a marinade.
  3. Rub the lamb shoulder with the marinade, ensuring it is evenly coated. Season with salt and pepper.
  4. Place the lamb in a roasting pan and roast in the preheated oven for 2 hours, or until the meat is tender and the internal temperature reaches 145°F (63°C).
  5. While the lamb is roasting, rinse the basmati rice until the water runs clear. In a large pot, bring the chicken broth to a boil.
  6. Add the rinsed rice to the boiling broth, reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Once the lamb is done, remove it from the oven and let it rest for 10 minutes before slicing.
  8. Serve the sliced lamb over the cooked basmati rice.
