Roasted Spiced Lamb (omani Mashuai)
Roasted Spiced Lamb, also known as Omani Mashuai, is a traditional dish from Eastern Arabian cuisine that features tender, flavorful lamb infused with aromatic spices.
Ingredients
- 2 lbs lamb shoulder, bone-in
- 2 tbsp Omani spice mix
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 cups basmati rice
- 6 cups chicken broth
Instructions
- Preheat the oven to 325°F (165°C).
- In a small bowl, mix together the Omani spice mix, turmeric, cumin, coriander, cinnamon, garlic, and olive oil to create a marinade.
- Rub the lamb shoulder with the marinade, ensuring it is evenly coated. Season with salt and pepper.
- Place the lamb in a roasting pan and roast in the preheated oven for 2 hours, or until the meat is tender and the internal temperature reaches 145°F (63°C).
- While the lamb is roasting, rinse the basmati rice until the water runs clear. In a large pot, bring the chicken broth to a boil.
- Add the rinsed rice to the boiling broth, reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- Once the lamb is done, remove it from the oven and let it rest for 10 minutes before slicing.
- Serve the sliced lamb over the cooked basmati rice.
