Rogan Josh (रोगन जोश)

Ingredients

  • 1 kg lamb, cut into pieces
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, pureed
  • 1/2 cup yogurt
  • 2-3 green cardamom pods
  • 1 cinnamon stick
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon fennel powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/4 teaspoon saffron strands
  • Salt to taste
  • 2 tablespoons ghee
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a heavy-bottomed pan and add cumin seeds, cardamom pods, and cinnamon stick. Sauté for a minute.
  2. Add chopped onions, garlic, and ginger. Cook until the onions are golden brown.
  3. Add the lamb pieces and brown them on all sides.
  4. Stir in the tomato puree, yogurt, and all the spices. Mix well.
  5. Pour in 2 cups of water, cover the pan, and simmer for 1 hour or until the meat is tender.
  6. Garnish with fresh coriander leaves and serve hot.
