Rogan Josh (रोगन जोश)
रोगन जोश (Rogan Josh) is a traditional Kashmiri dish known for its rich and aromatic flavors. This slow-cooked meat dish is a staple in Kashmiri cuisine and is often enjoyed with steamed rice or naan.
Ingredients
- 1 kg lamb, cut into pieces
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 tomatoes, pureed
- 1/2 cup yogurt
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon fennel powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/4 teaspoon saffron strands
- Salt to taste
- 2 tablespoons ghee
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a heavy-bottomed pan and add cumin seeds, cardamom pods, and cinnamon stick. Sauté for a minute.
- Add chopped onions, garlic, and ginger. Cook until the onions are golden brown.
- Add the lamb pieces and brown them on all sides.
- Stir in the tomato puree, yogurt, and all the spices. Mix well.
- Pour in 2 cups of water, cover the pan, and simmer for 1 hour or until the meat is tender.
- Garnish with fresh coriander leaves and serve hot.
