Ingredients

  • 1 large cucumber, peeled and julienned
  • 1 large jicama, peeled and julienned
  • 1 small pineapple, peeled and julienned
  • 1 firm tofu, cubed
  • 1/2 cup roasted peanuts, crushed
  • 1/2 cup fresh bean sprouts
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves

Instructions

  1. In a large bowl, combine the cucumber, jicama, pineapple, tofu, peanuts, and bean sprouts.
  2. Add the cilantro and mint leaves to the bowl.
  3. Toss the ingredients together until well mixed.
  4. Prepare the Rojak sauce by mixing 1/4 cup of tamarind paste, 2 tablespoons of palm sugar, 1 tablespoon of soy sauce, and 1 teaspoon of chili paste in a small bowl.
  5. Pour the Rojak sauce over the mixed ingredients and toss to coat evenly.
  6. Transfer the Rojak to a serving dish and serve immediately.
