Rojak Rendezvous
Rojak Rendezvous is a popular fruit and vegetable salad dish in Singaporean cuisine, known for its sweet, spicy, and tangy flavors. This refreshing dish is perfect for a hot day and makes a great appetizer or snack.
Ingredients
- 1 large cucumber, peeled and julienned
- 1 large jicama, peeled and julienned
- 1 small pineapple, peeled and julienned
- 1 firm tofu, cubed
- 1/2 cup roasted peanuts, crushed
- 1/2 cup fresh bean sprouts
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
Instructions
- In a large bowl, combine the cucumber, jicama, pineapple, tofu, peanuts, and bean sprouts.
- Add the cilantro and mint leaves to the bowl.
- Toss the ingredients together until well mixed.
- Prepare the Rojak sauce by mixing 1/4 cup of tamarind paste, 2 tablespoons of palm sugar, 1 tablespoon of soy sauce, and 1 teaspoon of chili paste in a small bowl.
- Pour the Rojak sauce over the mixed ingredients and toss to coat evenly.
- Transfer the Rojak to a serving dish and serve immediately.
