Ingredients

  • 1 lb beef sirloin, thinly sliced

  • 2 tomatoes, sliced into wedges
  • 1 yellow chili pepper, thinly sliced
  • 12 spring roll wrappers
  • Vegetable oil for frying

Instructions

  1. In a bowl, marinate the beef slices with soy sauce, red wine vinegar, cumin, and paprika. Let it sit for 10 minutes.
  2. Heat a skillet over high heat and stir-fry the marinated beef until browned. Remove from the skillet and set aside.
  3. In the same skillet, stir-fry the red onion, tomatoes, and yellow chili pepper until slightly softened.
  4. Add the cooked beef back into the skillet and toss everything together. Remove from heat.
  5. Place a spoonful of the lomo saltado filling onto a spring roll wrapper, then fold the sides and roll it up tightly.
  6. Heat vegetable oil in a deep pan and fry the spring rolls until golden and crispy. Drain on paper towels.
